easy knitting kits

What would be the essentials for a hand sewing/embroidery kit for a VERY creative 11 year old?
i have an 11 yr old niece living far away that has mentioned *several* times over the past year that she wants to sew and art quilt. although her mother is bright and has other talents, she's self admittedly truly useless at ANY kind of creative handwork-so no help there. her dad is deployed in the mid-east til april or may and he CAN sew or do almost anything with his hands. however, i want to send her a packet of goodies with some fairly easy projects she can do by hand on her own learning simple embroidery stitches and simple hand sewing techniques that she'll need even when she gets a machine. when her father returns, i'll go for a few weeks, buy her a good machine and teach her enough to get going. i am such a tool/toy/material junkie that i don't have any perspective and am afraid of overwhelming her (and her minimalist mother). what are your suggestions? she is extremely creative and taught herself to loom knit at age 8. are there any good websites she/we can turn to for instruction or easy and well explained projects? i've been doing this so long, i don't even really remember what the basics are.
